More than a decade of honing his craft within the discipline of French haute cuisine has shaped his technical foundation: precise structure, sharp sensibility, and an aesthetic vision polished to a fine edge.
At MOCA Dining, Chef Lam embraces a distinctly personal approach: allowing the gentle grace of Hanoi to meet the rigor of French technique, reinterpreting Vietnamese essence through a lens that is modern, understated, and deeply rooted in its natural depth. In his culinary world, flavors unfold with intention, details are executed with quiet finesse, and each dish opens a contemplative space where simplicity becomes the language of sophistication.

Born and raised in Hanoi, Chef Sơn brings nearly 20 years of expertise in pastry arts.
Since 2006, he has honed his craft at Hanoi’s most prestigious five-star hotel, collaborating with renowned chefs from leading luxury establishments worldwide. As Chef de Partie, he has had the honor of serving multiple Presidents and Heads of State.
To perfect his knowledge of French cuisine, he arrived in Paris in 2014, working in the brigade at
