LAM

NGUYEN

The spirit of Hanoi in a contemporary fine-dining form.

Raised in the quiet elegance of Hanoi, Chef Lam carries with him the palate memories of the capital - where refinement, restraint, and a sense of decorum are always held in the highest regard. More than a decade of honing his craft within the discipline of French haute cuisine has shaped his technical foundation: precise structure, sharp sensibility, and an aesthetic vision polished to a fine edge.

At MOCA Dining, Chef Lam embraces a distinctly personal approach: allowing the gentle grace of Hanoi to meet the rigor of French technique, reinterpreting Vietnamese essence through a lens that is modern, understated, and deeply rooted in its natural depth. In his culinary world, flavors unfold with intention, details are executed with quiet finesse, and each dish opens a contemplative space where simplicity becomes the language of sophistication.

Each of Chef Lam's creations tells a story, where his unwavering love and passion shine through. Offering an unforgettable dining experience, it is a seamless fusion of Vietnam's rustic charm and the sophistication of Western gastronomy.

Today, on the romantic and culturally rich Church Street, Chef Lam leads the MOCA Dining team in composing a new culinary chapter - one that is elegant, resonant, and contemporary; a fine-dining journey honoring Vietnamese identity through the disciplined yet tender perspective of a young chef.

MOCA Dining invites you to experience this new chapter, inspired and shaped by Chef Lam Nguyen.
